“Figgy pudding” is a traditional Christmas dessert that normally contains no figs — and isn't what Americans usually mean by “pudding.”
Figgy pudding — also known as plum pudding or Christmas pudding — is a staple of the British Christmas table, she says.
“It resembles something like a cannonball, and it maybe feels a bit like a cannonball when it hits your stomach, but it's tradition and we love it,” Waugh tells NPR's Michel Martin.
What is figgy pudding?
Figgy pudding (or plum, which was the name for any kind of dried fruit back in the day) originated in 14th-century Britain as a way to preserve food. A soup-like dish, it was served as a fasting meal in preparation for the Christmas season. Beef and mutton were mixed with raisins and prunes, wines and spices.
Figgy is a spice-like soufflé made with figs and walnuts. Some versions contain plums, but they aren't necessarily a must. In some cases, figs aren't used in it at all, though the recipe below contains figs. The cake is moist, delicious and fairly easy to make.
Americans may not be as familiar with it as British folks, as it is a common holiday dessert in Britain. In more recent years, it is served as a steamed cake that contains currants, raisins, and brandy. This could be why it is still so popular!
Figgy Pudding Recipe
I have always wondered what they were talking about in that Christmas carol. Well here it is; a recipe for Figgy Pudding. I always pictured a traditional pudding, like we know it, but the English mean something different. It's actually more bread or cake-like.
Add the eggs and beat well. Fold in the flour, the pureed date mixture and the chocolate. Put the mixture into 4 buttered, 1-cup individual ramekins, filling halfway or slightly under. Put in the oven and bake for 20 to 25 minutes. Prepare the sauce by stirring the sugar and cream in a medium saucepan over low heat. Simmer until the sugar dissolves. Raise the heat and bring to a boil, then reduce the heat and simmer for 5 minutes. Add the butter and stir until incorporated. Remove the ramekins from the oven and let stand for 10 minutes. May be served in the ramekin or unmolded onto a small serving plate. With a paring knife cut a cross in the top of the puddings for the sauce. Pour the sauce into the cross in the centre of each pudding, then pour more sauce over the puddings and allow it to soak in slightly. Top with fresh figs and vanilla ice cream or heavily whipped cream.

Figgy pudding is not plum pudding, although it can be considered a precursor to it. It is not as rich, nor as complex in its recipe.
